Instructions

Heat the Cream

    Pour **100g cream** into a small saucepan or pot.

    Heat over medium heat until the first bubbles appear — do not bring to a boil.

Add Cocoa & Salt

    Add **5g cocoa powder** and a **pinch of salt**.

    Whisk thoroughly until the cocoa is fully dissolved with no lumps.

Melt the Chocolate

    Remove the pot from heat.

    Add **35g milk chocolate**, broken into small pieces.

    Wait 30 seconds, then stir until the chocolate is fully melted and the mixture is smooth and glossy.

Add Milk & Serve

    Pour in **40g milk** and stir until smooth — this gently lowers the temperature and makes the drink sippable.

Chef's Notes

Salt is the secret ingredient — it enhances the chocolate flavor. Use quality cocoa (Callebaut, Cacao Barry) — the difference is huge. For a more bitter version, swap milk chocolate for dark 60–70%. The drink is best fresh, but can be reheated gently over low heat.
